it's the cocktail season!

I'm actually not too much of an alcohol drinker. To be honest it's because of my health consciousness.. - lucky me I got a Gin drinking husband and he's always down for my leftovers ;) 
But ones in a while I do crave a refreshing cocktail. Especially on hot summer nights. 
Last week we got invited by Hendrick's Gin to try their delicious varieties. And I got to mix my very own cocktail. Gin has always been one of those liquors I would drink. Since it's rather tart than sweet. And I like that their Gin tastes like cucumber! Very refreshing. 
Back home I made some lavender-honey syrup (it's perfect for cocktails and iced lattes). I actually got into lavender stuff while living in Los Angeles. You should give it a try. Lavender is not just good against moths ;) 

lavender honey syrup
+ 1 cup local honey
+ 1 cup water
+ juice of 1 lemon
+ a bundle of lavender buds

Add the honey, water and lemon juice to a sauce pan. Stir to combine and heat over medium high. Bring to a boil point. Reduce the heat and add the lavender. Simmer for about 30', until the texture starts to thicken. Let cool and then pour through a strainer or cheese cloth. Store the syrup in a covered bottle or jar. Ones completely cool place into your fridge. 

For the cocktail I just added 1cl of Gin, a huge ice cube and 2cl of the syrup. In addition to it you can add some lemon juice. fill up the glass with sparkling water or tonic water, whatever you like better. I go for sparkling water since I get to enjoy a SodaStream at home.
