sweet potato & carrot oatmeal porridge

sweet potato and carrots for breakfast? yes that's a thing. this recipe was inspired by my sons baby food. because when I tried his carrot puree the other day I thought: wow, that's actually really really good. so simple, but very tasty. and since we mostly have some sweet potatoes in our fridge I just combined it. Sweet potatoes are high in potassium, which decreases the risk of stroke, lowers blood pressure, protects against loss of muscle mass, reduces formation of kidney stones and so on.. sweet potatoes are fewer in calories than regular potatoes. they protect against cancer, reduce the risk of obesity, diabetes and heart disease. and: sweet potatoes are super delicious and very versatile. 

this recipe is without any kind of spice since I prepared the puree and oatmeal porridge for my son. you can always add a bit of cinnamon, nutmeg, vanilla.. 

sweet potato-carrot oatmeal porridge
(serving size: 2)

+ 1 cup oats (I prefer fine ones)
+ 1,5 cup water
+ 2 carrots
+ 1 sweet potato
+ 1 tea spoon oil (I used coconut oil)
+ plant based milk (such as: almond milk from MONO)
+ fresh fruit, granola, roasted nuts, dried berries, cocoa nibs for the topping
+ optional: sweetener (such as honey, maple syrup, date syrup, coconut nectar..)

peal and chop the carrots and sweet potato in cubes. heat the oil in a sauce pan. cook the carrots and potato with a bit of water till tender and soft. Puree in a blender. 

cook the oats with enough water for around 10 minutes. Ones the oats are done mix with the carrot-sweet potato puree, refine with your nut milk of choice, Top with whatever you like and drizzle with honey i.e. //
