beetroot hummus on sweet potato & vegan almond-basil pesto

I just love pretty things.. 

beets & sweet potatoes, how wonderful the colours and amazing the health benefits. 

- beets boost your stamina, lower your blood pressure, help fight inflammation, protect internal organs. beets also contain the B vitamin folate, which helps reduce the risk of birth defects. 
 But careful, beets are also have the highest sugar content of all vegetables, so eat in adequate amounts.. 

- orange sweet potatoes one of the most amazing thing about those "sweet" potatoes to me is that even they taste so sweet, their natural sugars are slowly released into the bloodstream. which helps to ensure a balanced and regular source of energy, without the blood sugar spikes linked to fatigue and weight gain.
It can be very helpful to include some healthy fats in your meal if you want to enjoy the full beta carotene-benefits. 

oven roasted sweet potato
I got an organic sweet potato, since I like to eat the skin with it. pre-heat your oven on 200°. Place the potato on a baking sheet and bake for around 20 minutes. 

beetroot hummus
+ 1 cup cooked chickpeas
+ 1-2 tablespoons cold water (you might need a little bit more)
+ 1/4 cup cooked beets
+ 1/2 cup tahini
+ juice of one lemon
+ salt & pepper to taste
+ 1 tea spoon cumin seeds
+ 2 tablespoons olive oil

beginn with blending the chickpeas and ice water till smooth. then add all the other ingredients and blend. Depending on how thick / runny you'd like to have your hummus, you can always add more water to it. 

almond-basil pesto
+ 1 cup fresh basil
+ 1/4 cup roasted almonds
+ 1/2 cup high quality olive oil
+ juice of a lemon half
+ salt & pepper to taste

blend till smooth.. 

I served it with farm fresh salad and Veganella (vegan mozzarella made out of cashews from Soyana) - I by the way used for the first time the home delivery service. I found pretty much all of the ingredients on their page.. It's amazing, because they carried all the shopping bags upstairs (I mean, a little workout doesn't harm nobody - we live on the 5th floor) ;)
