Pistachio lime bars

yay, spring arrived in Zurich! And matching to the new season I made some refreshing power bars. raw. refined sugar free. gluten free. energizing. a delightful treat. 

+ 1 handful dates
+ 1 handful figs
+ 1 table spoon tahin
+ juice of one lime
+ 1 cup almond milk
+ cinnamon (as much as you like)
+ 1 pinch sea salt
+ 1 pinch of cardamon

put all the ingredients into your blender. blend everything till you got a smooth texture. you might have to add a little more almond milk. 

+ 1-2 cups puffed quinoa
+ 1-2 cups almond meal

add the blended ingredients to the quinoa and almond meal, mix everything and spread onto parchment paper. you want to put the parchment paper into a baking tray. 

+ 1 cup pistachios
+ 1 cup pumpkin seeds

put the nuts and seeds into your blender and grind them (just shortly, you still want small pieces and not a powder). now sprinkle the pieces over the wet mixture and freeze the bars over night.
